As soon as I hit Chicago, one of my besties, Pat Kline, knows what to do - call her daughter, Dai Lai. My hope is that I am placed on her busy calendar for a meal from her menu of deliciousness. I can't say I have a favorite; whatever she prepares is beautiful and scrumptuous and reflects her many travels to South America and the Caribbean. She takes culinary classes to exact global spices and dishes for her catering menu.
Garden Spices revisits Dai Lai to find her calendar full with catering dates for weddings and the many spring events taking place in Chicago. This chef has been in her catering kitchen for over 30 years.
