Eating with Algene and Albert Norwood: Good Vibes and Great Food!


Napa Cabbaage Salad



We traveled with Algene Norwood invited us to experience her global travels in a previous issue of Garden Spices. William Kennedy and I recently caught up with Algene and her husband, Albert, at their estate-like home., where she invited us to lunch. William toured the land, with Albert, and upon their return, I sat down some serious eating. I asked Algene to share her recipes with us Gate open - Victorine

Napa Cabbage Salad


Ingredients:


1 lg. Chinese Napa Cabbage

5-6 green onions sliced


Topping:


2 T. Butter

1T. Olive Oil

1 pkg. Ramen Noodles

1C Slivered almonds

Salt to taste


Dressing:


½ c Canola oil, (not olive oil)

¼ c Sugar

1/3 Apple Cider Vinegar

1 T Soy Sauce

1 tspn. Sesame oil


Preparation:


• Mix cabbage and green onions

• Combine dressing ingredients and pour into a jar

• Tighten the lid and shake well

• Pour over the cabbage and set aside

• In a large frying pan, melt butter & stir in oil and sugar.

• Add broken noodles, almonds & salt (optional)

• Sautee until noodles and nuts are golden brown

• Pour over salad and mix

TOMATO PIE


Ingredients:


1 unbaked pie crust

5 tomatoes sliced

10 fresh basil leaves

1 med. sliced onion

1 c mozzarella cheese grated

1 c sharp cheddar cheese grated

4 strips cooked bacon

¾ c mayonaise


Preparation:


• Heat oven to 375 degrees

• Bake ie crust until brown

• Lay sliced tomatoes on paper towel to absorb the juice for 10 mins,

• Pat tomatoes dry

• Layer the tomatoes, onions, and basil, in the pie crust.

• Crumble bacon on top

• Mix both cheeses with mayo.

• Spread on top of pie and bake 20-25 minutes


 


BLUEBERRY SALAD (after we consumed plenty of it)




Blueberry Salad


Ingredients and preparation:


2 pkgs. Black raspberry jello or grape jello

2 c. boiling water

1 large can crushed pineapple drained

1 large can blueberries


• Add jello to the boiling water. Stir until dissolved

• Add the pineapple, blueberries and the liquid from the blueberries.

• Add a little water if more is needed.

• Let congeal slightly.


Topping:

1 (3 oz.) pkg. cream cheese

1 (8 oz.) carton sour cream

½ c sugar


Blend together and spoon on top of jello. Sprinkle with nuts.
