Caribbean Kitchen with Julies

How about a Caribbean Thanksgiving meal?  Not that the holiday is celebrated on St. Maarten, but when I saw this plate of deliciousness, I thought about the traditional fare and the spice-up of a Caribbean plate.-Victorine

Turkey wings, with Rice n’ peas, plantain, cucumbers, avocado, and beet, avocado (optional)


Heat oven to 350

 Ingredients for Baked Turkey Wings

Vinegar or lime/lemon to clean turkey

2.5 lbs. Turkey wings – split apart

little salt

turmeric

curry powder ( optional)

2 cloves garlic

sliced onions, sweet peppers, celery

1-2 Tbs Olive oil

“I use vinegar or lime/lemon to clean my turkey cut of side, etc before seasoning with a little salt Tumeric/curry powder (optional) garlic, onions, sweet peppers, celery or just season with your favorite BBQ (marinate) ” – Jullies

Turkey wings with a side of sliced avocado


Rub wings with olive oil

Place in a pan with vegetables

Cover with foil

Bake at 350 for 1-`1/2 – 2 hours.  Take off covering for the last 30 mins.  If not browned, cook up to 30 minutes more.

Rice

2 cups

“I usually use Chefway rice or Jasmine Mahatma rice” -Julies

Mix rice with 1/2 can of black beans, 1/2 can drained corn, shredded carrot (optional)

Plaintain

2 plantains, peeled and sliced 1 inch (see picture)

1/4 cup of oil

Heat oil till hot, add the plantain and turn the temperature down.  Cook slowly until plantain is tender.

Cucumbers

Slice 1 and marinated in Italian dressing.
