Caribbean Cabbage and Saltfish

Some folks just love to cook, and some folks can burn!!  If there is one kitchen I love, it is that of my sister-friend,  Chrisje Comvalius.  She cooks from any tradition,with zest and fervor,  but my favorite is her Caribbean cuisine, especially Surinamese.

We heard from Contributor Que, as she  harvested her cabbage in Gardening with Love. Now,  Guest Contributor, Chrisje Comvalius shares one of her cabbage recipes. – Victorine

 

Ingredients:

1 head of cabbage shredded

1 Tbs. Oil

1 onion chopped

2 cloves garlic chopped

1 Scotch Bonnet pepper

1 Tsp. Soya

1 chopped tomato

Use a Wok and skillet.

Prepare:

The night before, soak the saltfish in water to remove salt.

In skillet, fry the onion in oil.  Add chopped garlic, tomato, and soya.  Cook until it becomes a thick sauce.

Add the whole bonnet.  Put a lid on it and close.

Pat the saltfish dry.  Use Wok to fry in a Tbspn. of oil.  Stir to keep from sticking.

Remove cooked saltfish from pan, and quickly stir fry the cabbage.

Add back the saltfish.  Add sauce.  Taste for salt seasoning.  Ready to eat

Beyond her career as an educator, from 2004 to 2008 Chrisje Comvalius had a starring role in the Dutch soap Good times, bad times . For this, she stood for three years in the theater with a monologue presentation entitled “Mastella,” which she picked up again in a repeat performance after her role in the soap in 2008, now under the direction of the author’s monologue, and those in the Netherlands and Suriname staged in 2008.  Chrisje currently has also nutured her soul through acting and coaching.  “I just finished a pilot for a TV series; I have a role in a children’s movie, and I coach some young actors.”
